Ponceau 3R is a red dye that has been shown to have carcinogenic potential in vivo and in vitro. It has been found to cause liver lesions and chronic toxicity in animal studies. Ponceau 3R is a water-soluble, non-polymeric, synthetic dye that can be synthesized with the use of magnesium salt. This dye is used as a food coloring in some countries, but it is not permitted for use as a food additive in the United States. Ponceau 3R also displays antimicrobial activity against gram-positive bacteria, although it does not have any effect on gram-negative bacteria.
