Lecithin is a fatty substance that is found in many foods and is synthesized by the liver. It plays an important role in lipid metabolism. Lecithin can be obtained synthetically or by purifying it from natural sources, such as egg yolk. Lecithin's primary function is to act as an emulsifier, which means it helps keep fats from separating into layers. Lecithin also has antioxidant properties and contains α-tocopherol, which protects against oxidation of lipids. Lecithin has been shown to increase the uptake of anions (negatively charged particles) across cell membranes and increase the fluidity of fatty substances. It also contains a hydroxyl group and a carbonyl group, which help form hydrogen bonds between lecithin molecules and phosphatidylcholine molecules. These hydrogen bonds make lecithin more fluid than other phospholipids and allow it to form a greater number of bilayers
