Ascorbato ridotto, comunemente noto come acido ascorbico o vitamina C nella sua forma ridotta, è una vitamina solubile in acqua e antiossidante. Svolge un ruolo cruciale in vari processi biologici, inclusa la sintesi del collagene, la funzione immunitaria e l'assorbimento del ferro dagli alimenti vegetali. La struttura chimica di Ascorbato ridotto presenta un anello di lattone a sei carboni con più gruppi idrossile, che contribuiscono alla sua reattività e solubilità in acqua.
