Tartrazina, noto anche come E102, è un colorante azoico sintetico di colore giallo limone comunemente usato come agente colorante negli alimenti. È caratterizzato dalla sua brillante tonalità gialla ed è solubile in acqua, rendendolo adatto per varie applicazioni nell'industria alimentare e delle bevande, inclusi bibite, caramelle e prodotti da forno.
