Tiramina

Tiramina è un composto monoamina di origine naturale derivato dall'aminoacido tirosina. È classificato come amina biogenica ed è principalmente presente in vari alimenti, in particolare in prodotti stagionati o fermentati come formaggio, carni stagionate e alcune bevande alcoliche. È noto che Tiramina svolge un ruolo nel corpo come neurotrasmettitore ed è coinvolto nella regolazione della pressione sanguigna e dell'umore. Chimicamente, è caratterizzato dalla sua struttura fenolica, con un gruppo idrossile attaccato a un anello benzenico, insieme a una catena laterale di etilamina. Tiramina può agire come vasocostrittore e può influenzare il rilascio di norepinefrina, il che può portare a un aumento della pressione sanguigna. A causa del suo potenziale di interazione con gli inibitori della monoamino ossidasi (IMAO), le persone che assumono questi farmaci devono monitorare l'assunzione di Tiramina per evitare crisi ipertensive. Substrate for dopamine β-hydroxylase (DBH) enzymatic activity assay. The artificial DBH substrate tyramine is converted by DBH to octopamine, which is then oxidized to parahydroxybenzaldehyde by sodium periodate. The oxidation is stopped by sodium metabisulfite. Parahydroxybenzaldehyde is then quantified by its absorbance at 330 nm in the UV. This assay is sensitive enough to detect DBH enzymatic activity in human serum or plasma. Suitable fluorogenic substrate for the determination of peroxide activity in the fluorescence enzyme immunoassay for insulin.
