α-Carotene is a carotenoid that is responsible for the yellow, orange, and red colors of many fruits and vegetables. α-Carotene is converted to vitamin A in vivo and has been shown to have antioxidant properties. It also has significant interactions with other drugs such as warfarin (Coumadin®) and phenytoin (Dilantin®). Studies in vitro show that α-carotene can inhibit polymerase chain reactions (PCR) from wild-type strains of Saccharomyces cerevisiae and Escherichia coli. Further studies are needed to determine whether this inhibition is clinically relevant. α-Carotene can be found in many foods such as carrots, sweet potatoes, pumpkin, kale, spinach, broccoli, apricots, peaches, papaya, mangoes, and tomatoes.
