1-(2,5-Dimethoxyphenyl)-1-butanol is a metabolite of the fungal strain Kluyveromyces lactis. It inhibits the growth of bacteria, such as Escherichia coli and Staphylococcus aureus, by interfering with their cell membranes. The fermentation of 1-(2,5-dimethoxyphenyl)-1-butanol by K. lactis can be used as an antimicrobial agent to prevent food spoilage. The metabolite has also been shown to have probiotic and nutritional activities mediated by hexanoic acid and propionate produced during fermentation. This compound was found in headspace gas samples from plants such as tomato plants (Solanum lycopersicum), lettuce (Lactuca sativa), and cucumber (Cucumis sativus).
