3-Ethoxy-4-isopropoxybenzaldehyde is an organic compound that belongs to the class of aldehydes. It is used in the food industry as a flavoring agent and can be found in many different foods, such as breads, cakes, cookies, meats, and fish. 3-Ethoxy-4-isopropoxybenzaldehyde has been shown to inhibit the growth of fungal cultures by inhibiting the synthesis of ergosterol. This compound also inhibits the production of syringic acid from syringaldehyde and vanillic acid from vanillin. 3-Ethoxy-4-isopropoxybenzaldehyde is metabolized by dealkylation reactions to form 3,4-dimethoxyphenol and 3,4 dimethoxyaniline. These metabolites are further metabolized to carboxylic acids.
