Glyceryl 1,3-distearate is a fatty acid ester that belongs to the class of glycerides. This compound has an acyl chain consisting of one saturated and one unsaturated fatty acid. The amino acid composition of glyceryl 1,3-distearate is C1 to C6, with a hydroxyl group at the end of the acyl chain. It is soluble in organic solvents but not in water. Glyceryl 1,3-distearate has been shown to react with silver ions to form silver complexes for use as stains for protein gels and other materials. It also reacts with biodiesel and suberin from plant sources to form ethyl esters and diacylglycerols.
