Protease is a proteolytic enzyme that is used in the textile industry to remove protein stains from fabric. It is also used as an ingredient in dishwasher detergents and cleaners. Protease is most effective at alkaline pH levels and has a broad substrate specificity, meaning it can break down many different proteins. Proteases are usually classified into two groups: serine proteases and metalloproteases. Proteases are sometimes used as chemical oxidizing agents, such as in the bleaching of paper pulp or the reduction of nitrobenzene to aniline.
