Vitamin K1 is a fat-soluble vitamin that is found in green vegetables, liver, and other animal products. It has been shown to have both proton transfer and intramolecular proton transfer. The latter is the result of an epoxide group that reacts with alcohols or phenols to form a molecular ion. This process can be monitored by gas chromatography/mass spectrometry and the presence of the protonated molecular ion at m/z 301.4 can be used as an indicator for the presence of Vitamin K1. Intramolecular proton transfer occurs when there are two adjacent protons on adjacent carbon atoms that are separated by one atom, such as in the molecule 2-methyl-2-hexadecenal.
