13(S)-Hydroxy-9(Z),11(E)-octadecadienoic acid, methyl ester (13-HODE) is an oxidation product of linoleate and a reactive carbonyl compound. It is formed by the oxidation of alpha-linolenic acid or linoleic acid. 13-HODE is found in the lipids of foods that are oxidized during processing, such as meat and oils. 13-HODE can be used as a biomarker for lipid oxidation in foods and also has been shown to have synergistic effects with other reactive carbonyls, such as 4-hydroxynonenal.
