The mode of action of neohesperidin involves its conversion into neohesperidin dihydrochalcone (NHDC), which is an intensely sweet compound. This transformation occurs through hydrogenation, enhancing its sweetening properties. As a sweetener, NHDC exhibits around 1,500 to 1,800 times the sweetness of sucrose depending on the concentration and pH of the medium.
