Cyclopropylmethyl triphenylphosphonium bromide (CPTPPBr) is a potent inhibitor of nitrosation, which is the chemical reaction that forms nitroso and nitro compounds. It inhibits the formation of harmful substances such as estrone methyl ethers, which are known to be carcinogenic. CPTPPBr has been found to inhibit the formation of hydrocarbon-based alzheimer's disease-causing amyloid beta peptide in vitro. This compound also inhibits acetaldehyde dehydrogenase and alcohol dehydrogenase, enzymes that catalyze reactions involved in alcohol metabolism. CPTPPBr is not toxic to humans because it is not absorbed orally and does not react with gastric acid. It can be used as a food additive or preservative due to its low toxicity levels.
