Saccharin is a sweetener that is used as an artificial sweetener. It has a bitter taste and is about 300 times sweeter than sucrose. Saccharin was the first artificial sweetener to be discovered, in 1879, by accident. It was discovered when chemist Constantin Fahlberg left a saccharin-containing test tube on his desk, and forgot about it for three days. When he found it again, he tasted it and noticed its sweet taste. His discovery of saccharin led to the development of Sweet'N Low and Equal, which are also artificial sweeteners.
Saccharin can form hydrogen bonds with other molecules because of the nitrated group at the 2 position on the phenyl ring. Saccharin can form dimers with another saccharin molecule through hydrogen bonding interactions between nitrated groups at different positions on the phenyl ring.
