Ascorbato reduzido, comumente conhecido como ácido ascórbico ou vitamina C em sua forma reduzida, é uma vitamina solúvel em água e antioxidante. Desempenha um papel crucial em vários processos biológicos, incluindo a síntese de colágeno, a função imunológica e a absorção de ferro de alimentos de origem vegetal. A estrutura química de Ascorbato reduzido apresenta um anel de lactona de seis carbonos com múltiplos grupos hidroxila, que contribuem para sua reatividade e solubilidade em água. Como antioxidante, ajuda a neutralizar radicais livres, protegendo assim as células do estresse oxidativo. Ascorbato reduzido também está envolvido em reações enzimáticas, servindo como cofator para várias enzimas importantes.
