Carbobenzoxi-L-tirosina, também conhecido como Z-Tyr-OH, é um derivado do aminoácido tirosina, onde o grupo amino é protegido por um grupo carbobenzóico (Z). Este composto é caracterizado por sua aparência cristalina branca a off-white e é solúvel em solventes orgânicos como metanol e dimetilsulfóxido, mas tem solubilidade limitada em água. É comumente utilizado na síntese de peptídeos como um grupo protetor para a funcionalidade amino da tirosina, permitindo reações seletivas sem interferência do grupo amino. The compound binds to the active site of enzymes, blocking their ability to hydrolyze proteins. In addition, N-Cbz-L-tyrosine has been shown to inhibit aminopeptidases and carboxypeptidases with IC50 values of 0.5 mM and 1 mM, respectively.
