Ethyl propionylacetate inhibits β-amino acid racemases, which are enzymes that catalyze the formation of chiral amino acids from their corresponding racemic mixtures. This inhibition may be due to a stereoselective interaction between the amine group and the tertiary alcohol group on the enzyme. Molecular modeling studies have suggested that this interaction may be due to hydrogen bonding between these two groups. The inhibitory effect of ethyl propionylacetate on β-amino acid racemases may be useful in treating bowel diseases such as inflammatory bowel disease.
