:Natamicina
Descrição:
Natamicina, também conhecido como pimaricina, é um antibiótico macrolídeo polieno usado principalmente como conservante natural em alimentos e como agente antifúngico em várias aplicações. É produzido pela fermentação de certas espécies de Streptomyces. Natamicina é caracterizado por sua capacidade de inibir o crescimento de uma ampla gama de fungos e leveduras, tornando-o particularmente eficaz na prevenção da deterioração em produtos lácteos, carnes e produtos de panificação. O composto atua ligando-se a esteróis na membrana celular fúngica, interrompendo a integridade da membrana e levando à morte celular. Natamicina é geralmente reconhecido como seguro (GRAS) para uso em alimentos, e sua eficácia é aumentada por sua baixa solubilidade em água, o que permite uma ação prolongada. Além de suas aplicações na preservação de alimentos, Natamicina também é utilizado em produtos farmacêuticos, particularmente no tratamento de infecções fúngicas em humanos e animais.
