O monoestearato de sorbitano, derivados de poli(óxido-1,2-etileno), comumente conhecido como polysorbate 80, é um surfactante e emulsificante não iônico amplamente utilizado em alimentos, produtos farmacêuticos e cosméticos. É derivado do sorbitano, um álcool de açúcar, e do ácido esteárico (ácido octadecanoico), com cadeias de poli(óxido-1,2-etileno) que fornecem propriedades hidrofílicas. Este composto é caracterizado por sua capacidade de reduzir a tensão superficial, permitindo a estabilização de emulsões e a solubilização de substâncias hidrofóbicas em soluções aquosas. Normalmente, é um líquido amarelado a âmbar com um odor suave e é solúvel em água, óleos e solventes orgânicos.
