Amyl n-Octanoate is an organic compound that belongs to the group of methyl ketones. It is a colorless oily liquid with a fruity odor, which is used as a flavoring agent. Amyl n-octanoate is often used in the preparation of artificial butter flavor. It has been shown to be reactive with hydrogen fluoride and hydrochloric acid, forming glycol ethers and fatty acids respectively. The reaction mechanisms for these reactions have been elucidated using surface methodology and crystalline cellulose.
