2-Methylquinoline N-Oxide (2MQNO) is a synthetic compound that has been shown to inhibit the growth of Leuconostoc mesenteroides. 2MQNO inhibits the synthesis of enzymes and proteins by reacting with carbonyl groups and radical coupling, which causes bond cleavage. The chloride anion from 2MQNO also causes cell wall damage in Listeria strains. This reaction results in a n-oxide moiety, which is the active form of this compound. 2MQNO has also been shown to reduce the growth rate of Listeria strains when used at high concentrations.
