The chemical structure of 3-hepten-2-one consists of an alcohol group with two hydroxyl groups, one methyl group, and one pentenyl group. This molecule has been observed in the gas phase by magnetic resonance spectroscopy as well as in solution at acidic and neutral pH values. In the gas phase, 3-hepten-2-one forms hydrogen bonding interactions with water molecules, while in solution it reacts with capsicum annuum (red pepper) extract to form reaction products that are hydroxy fatty acids.
