Methyl sorbate is a food additive used as an antimicrobial and preservative. It is often used in the production of fruit juices, wine, jams, and jellies. Methyl sorbate acts by inhibiting the growth of bacteria due to its low pH and high level of acidity. Methyl sorbate has been shown to be nontoxic to humans in doses up to 2000 mg/kg. It also inhibits the growth of yeast cells and fungi, which are organisms that produce ethyl alcohol from sugars during fermentation.
