• Descrição: Sodium β-hydroxypyruvate hydrate is a biochemical reagent that is used to prepare enzyme preparations. The main application of this chemical is in the production of L-amino acids from D-amino acids, which is catalysed by an enzyme called hydroxypyruvate reductase. This reaction can be carried out in two steps, with the first step being a reduction of hydroxypyruvate to hydroxylamine, and the second being an oxidation of hydroxylamine to form L-amino acid. This process has been shown to yield higher amounts of L-amino acid than traditional methods.
