Ethyl (2E)-3-(furan-2-yl)prop-2-enoate is an organic compound that belongs to the class of unsaturated fatty acid esters. It is a derivative of 2-furoic acid and can be synthesized by the reaction of ethyl acetoacetate with furfural in the presence of phosphite. Ethyl (2E)-3-(furan-2-yl)prop-2-enoate has been shown to be photocyclized with malonic acid under irradiation, which can be used for sustainable methods for the production of fatty acids. This compound was analyzed using single crystal x-ray diffraction techniques and it was shown that this material has a high degree of hydrogenation.
