Aflatoxin B1 is a toxin that inhibits the polymerase chain reaction and has been shown to inhibit nuclear DNA synthesis in vitro. Aflatoxin B1 also inhibits the activity of several enzymes, such as acetylcholinesterase, which is involved in the regulation of neurotransmission. It has been shown to cause cancer in animals by binding to DNA and inhibiting replication. Aflatoxin B1 binds to proteins in the cell membrane, which may be responsible for its toxicity. The binding of aflatoxins to proteins induces an increase in permeability and leakage of cell contents, leading to cell death. Aflatoxin B1 can be detected using fluorescence probe-based methods or electrochemical impedance spectroscopy (EIS).
