Azoalbumin is a soybean trypsin inhibitor that has been shown to be effective in the inhibition of protease activity in both human serum and sephadex g-100. It has been shown to inhibit the growth of bacterial strains such as Escherichia coli, and Pseudomonas aeruginosa, while not affecting the growth of other bacteria such as Staphylococcus aureus.
