Descrição:4-Bromo-2-nitrocinnamic acid is a naturally occurring amino acid that is a component of wheat, carrots, and cereals. It is an enzyme inhibitor and has been found to be stable under heat treatment. 4-Bromo-2-nitrocinnamic acid has been shown to inhibit the activity of 3 lysine hydrolase enzymes (LysE1, LysE2, LysE3) in vitro. This inhibition decreases lysine levels and may have health implications for infants fed with 4-bromo-2-nitrocinnamic acid treated wheat flour. The efficiency of 4-bromo-2 nitrocinnamic acid as an enzymatic inhibitor for these enzymes was determined by measuring the release of free lysine from various substrates at different concentrations of the inhibitor. These parameters were then used to calculate the theoretical inhibition percentage for each substrate at a given concentration.
