Cinnamyl alcohol is a substance that belongs to the group of organic compounds called alcohols. It has been shown to be an inhibitor of enzymes such as alcohol dehydrogenase and lignin peroxidase, which are involved in the production of lignin. Cinnamyl alcohol also inhibits the synthesis of proteins, nucleic acids, and other cellular components.
