In chemistry, hydration is the process of adding water to an organic molecule. It is a reversible process where the water is removed when heated and added when cooled. Hydration has been shown to have a significant effect on the solubility of peptides in water and on the stability of proteins. The hydration process can also be used as a means of synthesizing hydrolysable esters, which are often active as antibiotics. All amino acids that contain a free carboxylic acid group can be used for this reaction, but some are better than others. The best substrates for this reaction are those with an alpha-amino group (such as D-asparagine) or an alpha-hydroxy group (such as L-serine).
