Glycerine is a trihydric alcohol that is used as a solvent in pharmaceuticals, cosmetics, and soaps. It also acts as an emollient and humectant. Glycerin is produced by hydrolysis of fats or oils with water and the catalytic use of strong base. The reaction mechanism for glycerin is:
CH3-CO-OH + H2O → CH2-OH-CO-H + H+
The carbonyl oxygens are protonated to form carboxylates, which in turn react with water to form hydrocarbons. These hydrocarbons form esters with the glycerol molecule. The water vapor can be removed by distillation and the resulting product is glycerine.
