4-(2-Hydroxyethyl)benzaldehyde is a white crystalline solid with a sweet odor. It has antioxidant properties, and can be used as an additive in food products. 4-(2-Hydoxyethyl)benzaldehyde has been shown to inhibit the oxidation of linoleic acid by transfer of electrons from the phenolic hydroxyl group to the double bond of o-coumaric acid. This process is followed by a hydride transfer from the hydroxyethyl group to the carbonyl carbon atom, which leads to the formation of a cyclic compound. The compound can also be synthesized using dicarbonyl compounds and cyclic voltammetry.
