5-Methyl-2-hepten-4-one is a natural compound that is found in food. This compound has been shown to have the ability to inhibit the nuclear factor kappa-light-chain-enhancer (NF-κB) and cytokine production of human pathogens. It also inhibits the production of inflammatory mediators, such as nitric oxide and prostaglandin E2, by bv2 microglial cells. 5-Methyl-2-hepten-4-one has been shown to be an effective antiinflammatory agent in animal models of muscle diseases. This compound can be extracted from food using preparative hplc or solid phase microextraction followed by sample preparation on an on line analyzer with a chromatographic column.
