Methyl 2-methyl-3-furyl disulfide is an analytical reagent that is used to measure the concentration of furfural in food products. Furfuryl alcohol levels are often monitored as a marker of the extent of carbohydrate oxidation during processing, because it is produced by the oxidation of sugars. Methyl 2-methyl-3-furyl disulfide can be used for analysis of ethyl cinnamate, fatty acids and fatty acid esters in foods, and has been shown to have antiproliferative effects on mutant strains such as E. coli. This compound also has been shown to inhibit the growth of cells by binding to DNA, inhibiting protein synthesis and cell division.
