Metamitron is a chemical compound that consists of a sodium carbonate and ethylene diamine. It is used in the food industry as an additive to fruit juices, sauces, and other products as an emulsifier to prevent separation of fat and water. Metamitron also has been found to be effective in treating metabolic disorders such as fatty acid oxidation defects, by stabilizing organic compounds. The FT-IR spectroscopy of metamitron showed that it is composed of a carbonyl group with two hydrogen bonds and one oxygen atom. This molecule has four stable complexes: sodium citrate, anhydrous sodium carbonate, glycol ethers, and hydrogen bond. These complexes are formed due to the presence of various functional groups on the molecule, which provide sites for binding with other molecules.
