1-(Phenylmethyl)-2-azetidinecarboxylic acid ethylester is a natural amino acid that is found in Aspergillus flavus. It has been shown to inhibit the growth of Aspergillus flavus, which is a fungus that causes food spoilage. The enzyme responsible for the degradation of this compound is an esterase. This enzyme has been cloned and expressed in Escherichia coli, which provides a more convenient source for large-scale production. The sequence of 1-(phenylmethyl)-2-azetidinecarboxylic acid ethylester has been determined and the structure confirmed by X-ray crystallography. This compound is an imino ester with an acid sequence at C3 and C4 positions.
