It has been shown to be an effective reagent for the conversion of crystalline cellulose to cellobiose. Propionic anhydride is also used in the preparation of a wide variety of organic compounds, such as trifluoroacetic acid and its derivatives. In the laboratory, propionic anhydride is most commonly used in the preparation of analytical methods for alkanoic acids. The thermal expansion and water vapor are both high, with values of 5.1x10-5 and 5.3x10-5 mK-1 respectively. The boiling point is at 138 degrees Celsius, which makes it ideal for use in organic synthesis reactions that require heating or boiling.
