β-sitosterol is a plant sterol that has been shown to have hypoglycemic effects in experimental animals. β-sitosterol can prevent the formation of cholesterol from acetyl coenzyme A and inhibit the activity of hydroxymethylglutaryl-coenzyme A reductase, an enzyme involved in the production of cholesterol. It also inhibits carboxylesterases, which are enzymes that catalyze the hydrolysis of phospholipids in biological membranes. In addition, β-sitosterol interacts with p-hydroxybenzoic acid, which is a metabolite produced during lipid peroxidation reactions associated with inflammation and oxidative stress. β-sitosterol also inhibits mitochondrial membrane potential and Toll-like receptor signaling pathways. This molecule has been shown to be effective against solid tumours and mitochondria in cancer cells.
