Sodium 2-hydroxybenzenesulfonate is a monosodium salt that dissolves in water to form a solution with a pH of less than 7. It has the chemical formula NaHSO3 and can be prepared by reacting sodium carbonate with p-hydroxybenzoic acid. Sodium 2-hydroxybenzenesulfonate is an antimicrobial agent that is used in food processing, animal feed, and other industries. It is also used as an additive to nutrient solutions for bowel disease and as an ingredient in some detergents. The pure form of this compound is unstable at high temperatures, but it can be stabilized by adding sodium citrate or trifluoroacetic acid. Sodium 2-hydoxybenzenesulfonate reacts with particles to form hydroxylamine sulfonic acid, which is able to react with cations such as calcium, magnesium, or potassium. This reaction causes the particle to expand due to increased volume and heat
