Vanillyl ethylether is a white crystalline substance that can be used as an antimicrobial agent. It reacts with benzoic acid to form vanillin, which is a chemical compound found in the spice, capsicum annuum. Vanillyl ethylether can also be used in liquid chromatography to separate protocatechuic acid from tannins and other inhibitor compounds. It has been shown to have antimicrobial activity against film-forming bacteria. Vanillyl ethylether has been used as a film-forming polymer in plant cells and can inhibit cell growth by interfering with protein synthesis.
