Z-Val-Phe-OH is a proteolytic enzyme that cleaves proteins at the carboxyl side of hydrophobic amino acids, such as phenylalanine and valine. This enzyme is able to hydrolyze proteins in the cytosol, and has been shown to be involved in the release of inflammatory cytokines and growth factors from cells. It is also believed to play a role in pancreatitis, pancreatic cancer, and renal proximal tubule cell death. Z-Val-Phe-OH exhibits high activity against calf thymus DNA, but low activity against bacterial DNA.
