2-Dodecanone is a fatty acid that is naturally present in some foods and has been used as an alternative to chemical pesticides. It has inhibitory properties against certain bacteria, such as Streptococcus mutans, which can lead to tooth decay. 2-Dodecanone inhibits the growth of bacteria by binding to hydroxyl groups on their surface and forming hydrogen bonds with other hydroxyl groups. This prevents the bacteria from using these sites for attachment or for synthesizing substances that are important in bacterial metabolism. 2-Dodecanone also binds to copper chloride, preventing its use by the bacteria as an electron acceptor during respiration.
