Trans-ferulic acid is a bioactive phenolic compound that has been found to be a major contributor to the antioxidant capacity of wine, especially red wine. It is produced from ferulic acid by esterification with methanol and can be detected in many plant tissues, such as leaves, bark, roots, flowers and fruits. Trans-ferulic acid has been shown to have anti-inflammatory properties through its ability to inhibit the production of prostaglandins and leukotrienes. The presence of trans-ferulic acid in food products has been linked to increased stability, which may be due to its ability to scavenge reactive oxygen species that are generated during thermal processing.
