2-Ethyl-3-methylpyrazine is an organic compound that is found in a variety of plants, such as kidney beans. It is used in analytical methods to measure the levels of fatty acids in a sample by using solid phase microextraction. This compound has been shown to inhibit the formation of chlorogenic acid and other phenolic compounds from glycerol in a reaction with caffeic acid. 2-Ethyl-3-methylpyrazine also inhibits lipid peroxidation and prevents cell death in xenopus oocytes, which may be due to its ability to increase the frequency shift of light. The model system for this study was human erythrocytes.
