N-Lauroylsarcosine is a fatty acid that is used as a surfactant in cosmetics. It is soluble in water and has a high permeability coefficient. N-Lauroylsarcosine has been shown to inhibit the growth of herpes simplex virus, which may be due to its inhibitory effects on the enzymatic inactivation of the surface glycoprotein. It also inhibits the binding of antibody to cells, which may be related to its inhibition of polymerase chain reaction (PCR). This fatty acid can also be used as an emulsifier in bakery products. N-Lauroylsarcosine has been shown to have structural properties similar to those found in cell membranes. This property may explain why it inhibits cell proliferation and enzymatic activity by interacting with lipid components of cellular membranes.
