Acetone phenylhydrazone (APH) is a hydroxyl-containing molecule that inhibits the production of lipid peroxides. It is used as a pharmaceutical additive to prevent oxidation in tablets and capsules. APH has been shown to inhibit soybean lipoxygenase, an enzyme that catalyzes the formation of lipid hydroperoxides from polyunsaturated fatty acids. The inhibition of this enzyme prevents the release of free radicals, which can lead to cell damage. APH also acts as a polymerization inhibitor for some pharmaceutical preparations by preventing particle growth and crosslinking reactions.
