Isoamyl butyrate is a natural compound with the chemical formula CH3(CH2)2COOCH=CH2. It is found in a variety of foods and beverages, such as apples, pears, bananas, and citrus fruits. Isoamyl butyrate has been shown to stimulate the growth of probiotic bacteria, which may be due to its ability to inhibit the synthesis of fatty acids. The receptor cells for this compound are located on the tongue and in the stomach. Isoamyl butyrate has been shown to have hydroxyl groups that allow it to react with benzoates and methyl myristate at elevated temperatures. This reaction leads to thermal expansion.
