Petroselinic acid is a reaction product of oleic acid and hydrogen peroxide. It is also produced by the action of tumefaciens on fatty acids. The biochemical composition of petroselinic acid has been determined using phosphoric pentoxide, which has shown it to be a mixture of hydrocarbons with an unsaturated bond at the end. Petroselinic acid inhibits protein tyrosine phosphatase 1B (PTP1B), which is involved in insulin resistance, and can be used as a dietary supplement for people with diabetes. Petroselinic acid has been found to have anticancer properties, which may be due to its ability to inhibit tumor growth and induce apoptosis in cancer cells. This compound has also been shown to have anti-inflammatory properties and can inhibit the production of prostaglandin E2 (PGE2) as well as lipoxygenase activity from arachidonic acid.
