Propyl lactate is a colorless liquid that is used as an ingredient in food manufacturing. It has been shown to be a potential anticarcinogenic agent. Propyl lactate also has covalent linkages with hydroxyl groups, which are important for its reactivity. Propyl lactate can be produced by reacting propylene glycol and lactic acid in the presence of anhydrous sodium hydroxide and hydrochloric acid. The reaction mechanism involves the formation of two reactive species: propylene oxide and hydrogen chloride. These react with each other to form propylene glycol and hydrogen chloride gas, respectively. The reactions between the molecules of these reactive species produce aliphatic hydrocarbons, fatty acids, lactates, polymers, and other reaction products depending on the conditions used during the reaction.
